Nadan Mutton Curry
Ingredients:
1/2 Kg Mutton
2 Onion thinly sliced
1Tomato chopped
2 Green chillies splited
3 cardamoms
3 cloves
2 piece Cinnamon
1/4 tsp Fennel seed
2 tsp Ginger - Garlic paste
1/2 tsp turmeric powder
2 tsp Red chilli powder
4 tsp Coriander powder
1/4 tsp Garam masala powder
2 Tsp chopped coconut/ thengakothu
2 Twig curry leaves
2 Tsp oil
How to prepare:
Wash mutton pieces and drain well.
Heat oil in a kadai.Add whole spices(Cinnamon,cloves,cardamom&fennel seeds).Saute for 1 minute.Add sliced onions and salt .Saute well till onions reaches pinkish colour.Then add ginger garlic paste.Saute well till its raw smell goes away.Then add chopped coconut/thengakothu.Add the spice powders-turmeric,red chilli & coriander and saute for 2-3 minutes. Add chopped tomato and mix well.cook well till tomato became pulpy and oil stars separating from it.Add mutton pieces and keep stirring till masala coats mutton.Pour 1 1/2 cup water .Keep closed and cook well .
For easy use transfer this to a pressure cooker and cook it well.Normally my cooker takes 5-6 whistles.When every thing cooked well you will get a thick gravy with little brownish in colour.
Open the cooker and add 1/4 tsp garam masala and curry leaves.cook it for 1 minute and mix until all flavours are well blended.
This curry tastes best when it is cool and goes well with pathiri, chapati and ghee rice.
